Sugar Cookie S'mores

Ingredients:

For the Sugar Cookies:

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 3 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

For S'mores Assembly:

  • Large marshmallows

  • Milk chocolate squares or chocolate bars

Instructions:

For the Sugar Cookies:

  1. Preheat Oven:

    • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

  1. Cream Butter and Sugar:

    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  1. Add Eggs and Vanilla:

    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  1. Combine Dry Ingredients:

    • In a separate bowl, whisk together the flour, baking powder, and salt.

  1. Mix Dough:

    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

  1. Chill Dough:

    • Chill the cookie dough in the refrigerator for at least 30 minutes to make it easier to handle.

  1. Roll and Cut:

    • Roll out the chilled dough on a floured surface to about 1/4 inch thickness. Use cookie cutters to cut out shapes.

  1. Bake:

    • Place the cut-out cookies on the prepared baking sheets and bake in the preheated oven for 8-10 minutes or until the edges are lightly golden. Allow the cookies to cool completely.

S'mores Assembly:

  1. Prepare S'mores:

    • Once the sugar cookies have cooled, pair them up based on similar sizes and shapes. Place a piece of chocolate on the bottom side of one cookie and a marshmallow on the other.

  1. Toast Marshmallow:

    • You can toast the marshmallow over an open flame, using a kitchen torch, or by placing the marshmallow-topped cookie under the broiler for a short time. Be sure to monitor it closely to prevent burning.

  1. Assemble S'mores:

    • Press the chocolate-topped cookie and marshmallow-topped cookie together, creating a sandwich. The heat from the marshmallow will melt the chocolate, creating a delicious s'mores experience.
