Sugar Cookie S'mores
Ingredients:
For the Sugar Cookies:
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
For S'mores Assembly:
Large marshmallows
Milk chocolate squares or chocolate bars
Instructions:
For the Sugar Cookies:
Preheat Oven:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Cream Butter and Sugar:
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add Eggs and Vanilla:
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, and salt.
Mix Dough:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Chill Dough:
Chill the cookie dough in the refrigerator for at least 30 minutes to make it easier to handle.
Roll and Cut:
Roll out the chilled dough on a floured surface to about 1/4 inch thickness. Use cookie cutters to cut out shapes.
Bake:
Place the cut-out cookies on the prepared baking sheets and bake in the preheated oven for 8-10 minutes or until the edges are lightly golden. Allow the cookies to cool completely.
S'mores Assembly:
Prepare S'mores:
Once the sugar cookies have cooled, pair them up based on similar sizes and shapes. Place a piece of chocolate on the bottom side of one cookie and a marshmallow on the other.
Toast Marshmallow:
You can toast the marshmallow over an open flame, using a kitchen torch, or by placing the marshmallow-topped cookie under the broiler for a short time. Be sure to monitor it closely to prevent burning.
Assemble S'mores:
Press the chocolate-topped cookie and marshmallow-topped cookie together, creating a sandwich. The heat from the marshmallow will melt the chocolate, creating a delicious s'mores experience.
